Admittedly not a beet but I accidentally bought an Asian purple sweet potato but Huckabeet sounds better. Once I saw that clean shaven face I knew it needed to be honoured this vara season. I planned to grow that beard back with chia seeds but they didn't sprout.  Not to worry no food waste here, This little guy was proptly roasted with carrots and mushrooms in a sheet pan and was delicious.
