THE RECIPE

This is a recipe that the Xi'an have always used to refresh themselves while enjoying delicious food. The name of the dish is a free translation of the Xi'an language to made understandable to the humans

The main ingredient is blue bilva with which the cold soup is made. In this cold soup you can add other elements to season it with different flavors, but in this recipe we will use traditional ingredients so we will use Marok egg, cured ham from Quasi Grazer and Oza skin.

This soup is easy to prepare, sweet and very refreshing, so it will never be missing from Xi'an food on hot days.

As tradition indicates, the best way to serve it is in a bowl of pingala bread, which in addition to acting as a container, serves as an accompaniment to the dish.

Before

We clean the blue bilvas and the ozas well. It must be taken into account that it is a recipe that is not cooked, and despite acidifying it with lune vinegar, it is very important that everything is very clean.

We cut the bilvas and add them to a bowl.

We peel the ounces and set aside. We cut the ham into small pieces and also the egg. We reserve

We cut the bread into small pieces and add a little water, let it rest for about 10 minutes. This way we help the bread soften if it is very hard and it will be much easier to beat.

Preparation

We put everything in a large bowl and add the oil, vinegar and salt. We blend until we have a liquid sauce. We test if there is enough salt and if not, we rectify it with a little more.

We add the ice and let it cool, you will have it very cold and perfect to try the best gazpacho.

To plate it, we put it in the bread bowl and accompany it with some slices of ham and the pieces of oza skin.
